Baked Scallops

  • 1 pound scallops

  • 2 beaten eggs

  • 10 Ritz crackers rolled into crumbs

Roll each scallop in crumbs, then dip in beaten eggs. Roll again in crumbs. Place a piece of butter on top of each scallop. Bake in shallow buttered pan for 20 minutes at 325 degrees. Rich and tasty! You'll love them!
